After opening a bottle of CARMEN'S does it need refrigeration? No refrigeration is needed either before or after opening of the bottle. In fact, if it is refrigerated, the extra virgin olive oil will solidify into a semi-solid layer. This is not harmful, but it does need to be brought back up to room temperature before you can enjoy our product. A quick method to warm up the bottle is to stand the bottle up in a bowl of warm water.
